Loaded Kumara Wedges with Chipotle Beef & Sour Cream

Ingredients
Kumara
- 800g kumara
- 1 block cheese, grated
Beef
- 3/4 red onion
- 1 pack beef mince
- 1 pack Mexican spices
- 2 Tbsp GF tomato sauce
- 1 can fire roasted tomatoes
- 1/2 pack chipotle sauce
Sour Cream
- 125g sour cream
- Remaining chipotle sauce (optional, adults)
Salad
- 1 lettuce
- 1/4 red onion (optional, adults)
- 1 tomato
- 1 carrot

Cook kumara Preheat oven to 220°C. Cut kumara into wedges. Toss on a lined oven tray with a drizzle of oil. Season and cook for about 20 minutes, until almost tender. Top with grated cheese and cook a further 5 minutes, until cheese has melted.

Prep onion Finely dice first measure of onion.

Cook beef Heat a drizzle of oil in a fry-pan on medium heat. Cook beef mince for about 5 minutes, until browned. Add onion and cook for about 2 minutes, until beginning to soften.

Add tomatoes Add Mexican spices and 1/2 tsp salt and cook a further minute, until fragrant. Add tomato sauce, canned tomatoes and first measure of chipotle sauce, bring to a simmer and cook for 6-7 minutes, until thickened. Season to taste.

Prep veggies Combine sour cream and remaining chipotle sauce in a bowl. Shred lettuce; thinly slice second measure of red onion; dice tomato 1cm; grate carrot. Toss in a bowl with a drizzle of oil and vinegar. Season to taste.

Serve wedges loaded with beef, sour cream and salad on the side.
