Peking Pork Noodles

Ingredients
Noodles
- 3 bundles egg noodles
Pork & Veggies
- 2 carrots
- 2 baby bok choy
- 1 pack Peking pork grind
- 1 clove garlic, minced
- 1/2 piece ginger, grated
- 1 pack Peking pork sauce
To Serve
- 1 pack sesame seeds
- 1 bunch coriander, chopped (optional, adults)

Cook noodles Bring a large pot of hot salted tap water to the boil with the lid on. Once boiling, add noodles and cook for about 8 minutes, until tender. Drain and return to pot with a drizzle of sesame oil to avoid sticking.

Prep veggies While pot comes to the boil, grate carrots and thinly slice bok choy. Keep separate.

Cook pork Heat a drizzle of oil in a large wok or deep fry-pan on high heat. Add pork and cook for about 5 minutes, until browned. Add carrot, garlic and ginger and cook stirring for 1-2 minutes until fragrant.

Add sauce and veggies Reduce heat to medium. Add Peking pork sauce, bok choy, and cooked and drained noodles. Toss to combine, until well coated. If you don’t have a wok or a large enough fry-pan for this, use a pot. Season to taste with soy sauce.

Serve Peking pork noodles sprinkled with sesame seeds and coriander.
