Beef Quesadillas with Sour Cream

Ingredients

Quesadillas

  • 3/4 red onion
  • 1 carrot
  • 1 courgette
  • 1 pack beef mince
  • 1 pack Mexican spices
  • 2 Tbsp tomato sauce
  • 1/2 cup water
  • 1 pack tortillas
  • 1 cup grated cheese

Sour Cream

  • 125g sour cream
  • 1 pack chipotle sauce

Salad

  • 1 cos lettuce
  • 1/4 red onion
  • 1 tomato

Steps

  1. Cook beef Preheat oven to high grill. Finely dice first measure of red onion, and grate carrot and courgette. Heat a drizzle of oil in a fry-pan on medium heat. Cook beef for about 5 minutes, until browned. Add onion and cook for about 2 minutes, until beginning to soften. Add carrot, courgette and 1 tsp salt and cook a further 2 minutes, until soft.
  2. Add Mexican spices and cook a further 1 minute, until fragrant. Add tomato sauce and water, and cook for 2-3 minutes, until water has evaporated.
  3. Prep sour cream and salad Combine sour cream and chipotle sauce in a bowl. Shred lettuce; thinly slice second measure of red onion; dice tomato 1cm. Arrange all salad ingredients on a platter.
  4. Make quesadillas Lay tortillas flat and spread beef mixture over one half of each tortilla. Sprinkle with cheese and fold tortilla over to enclose the filling, forming a half round quesadilla.
  5. Cook quesadillas Place quesadillas on an oven tray and grill for 2-3 minutes each side, until golden and crispy.
  6. Serve each quesadilla cut into wedges with salad and a dollop of chipotle sour cream.
