Chicken Teriyaki Stir-Fry with Broccoli and Soba Noodles

Ingredients

STIR-FRY

  • 1 pack lean chicken breast strips
  • 1/2 Tbsp soy sauce
  • 1/2 red onion, thinly sliced
  • 1 broccoli, cut into small florets
  • 1 pack teriyaki sauce
  • 1/2 cup chicken stock

NOODLES

  • 1 bundle soba noodles
  • 1 carrot, halved lengthways and thinly sliced
  • 1/2 pack baby spinach

Steps

  1. Bring a pot of hot salted water to the boil.
  2. Prep all ingredients.
  3. Marinate chicken. Place chicken in a bowl with soy sauce and set aside to marinate.
  4. Cook soba noodles. Cook soba noodles and carrot in pot of boiling water for 3-4 minutes, until tender. Drain well and return to pot with 1/4 tsp sesame oil and spinach and toss to combine. Season and keep warm.
  5. Cook chicken. Heat 1/2 tsp oil in a fry-pan on high heat. Cook chicken for 3-4 minutes to seal. Remove from pan and keep warm.
  6. Start stir-fry. Return same pan to high heat with 1/2 tsp oil. Add onion and broccoli to pan and cook for about 4 minutes, until soft. Return chicken to pan along with teriyaki sauce and stock and bring to a simmer. Simmer for 1-2 minutes, until chicken is cooked through. Season to taste.
  7. Serve noodles topped with stir-fry.
