Chicken Teriyaki Stir-Fry with Broccoli and Soba Noodles

Ingredients
STIR-FRY
- 1 pack lean chicken breast strips
- 1/2 Tbsp soy sauce
- 1/2 red onion, thinly sliced
- 1 broccoli, cut into small florets
- 1 pack teriyaki sauce
- 1/2 cup chicken stock
NOODLES
- 1 bundle soba noodles
- 1 carrot, halved lengthways and thinly sliced
- 1/2 pack baby spinach
Steps

Bring a pot of hot salted water to the boil.

Prep all ingredients.

Marinate chicken. Place chicken in a bowl with soy sauce and set aside to marinate.

Cook soba noodles. Cook soba noodles and carrot in pot of boiling water for 3-4 minutes, until tender. Drain well and return to pot with 1/4 tsp sesame oil and spinach and toss to combine. Season and keep warm.

Cook chicken. Heat 1/2 tsp oil in a fry-pan on high heat. Cook chicken for 3-4 minutes to seal. Remove from pan and keep warm.

Start stir-fry. Return same pan to high heat with 1/2 tsp oil. Add onion and broccoli to pan and cook for about 4 minutes, until soft. Return chicken to pan along with teriyaki sauce and stock and bring to a simmer. Simmer for 1-2 minutes, until chicken is cooked through. Season to taste.

Serve noodles topped with stir-fry.
