Cheats Beef & Mushroom Pie

Ingredients

Beef Pie

  • 1 pack puff pastry, cut into 4 pieces
  • 1 pack sliced mushrooms
  • 1 pack beef spices
  • 3/4 cup hot water
  • 1 pack beef sauce
  • 1 pack sous vide diced beef

Veggies

  • 1 pack baby carrots, trimmed and cut in half lengthways
  • 1/2 pack broccolini

Steps

  1. Before you start, preheat oven to fan bake 200°C. Bring a medium pot of water to the boil (using hot tap, with the lid on).
  2. Cook pastry Cut pastry into 4 squares or triangles and place on a lined oven tray. Bake for 8-10 minutes, or until puffed and golden. Check regularly to avoid burning.
  3. Heat a drizzle of oil in a medium fry-pan on medium-high heat. Stir-fry mushrooms for 3 minutes. Add beef spices and cook for 30 seconds. Add water, beef sauce and beef and bring to a simmer. Cook for about 5 minutes, until beef is hot and sauce has reduced. Season.
  4. Prep & cook veggies Cook veggies in pot of boiling water for 2-3 minutes, until just tender. Drain and toss with a knob of butter and season.
  5. Serve beef topped with pastry and veggies on the side.
