Indian Fish with Turmeric Emulsion

Ingredients

RICE

  • 1 pack turmeric brown rice
  • 1 courgette, grated
  • 1/2 Lebanese cucumber, finely diced
  • 1/2 pack baby spinach
  • 2 tsp vinegar
  • 1 pack poppy seeds and almonds

INDIAN FISH

  • 1 pack market fish
  • 1 pack Indian fish blend

TO SERVE

  • 1 pack turmeric lime emulsion
  • 1 bunch coriander, picked

Steps

  1. Bring a pot of hot salted water to the boil.
  2. Cook rice. Add turmeric rice to pot of boiling water and cook for about 25 minutes, until rice is tender. Drain and return to pot.
  3. Prep veggies.
  4. Prep & cook fish. Pat fish dry and remove any scales or bones. Cut any larger fillets in half. Season and coat in Indian fish blend. Heat 1/4 tsp oil in a non-stick fry-pan on medium-high heat. Cook fish for 1-2 minutes each side, or until just cooked through.
  5. Finish rice. Fold remaining rice ingredients through rice. Season to taste.
  6. Serve rice topped with fish and turmeric lime emulsion. Sprinkle over coriander.
