Mexican Pulled Beef Bowls

Ingredients
Rice
- 1 1/2 cups brown rice
- 2 1/4 cups boiling water
Beef
- 1 brown onion
- 1 carrot
- 1 pack Mexican spices
- 1 can chopped tomatoes
- 1/2 cup water
- 1 pack pulled beef
- 2 tsp soy sauce
Sour Cream
- 125g sour cream
- 1 pack applewood hot sauce (optional, adults)
To Serve
- 1 lettuce
- 1 tomato
- 1 cup grated cheese
- 1 bunch coriander, chopped

Cook rice Bring a full kettle to the boil. Combine rice, boiling water measure and a pinch of salt in a pot and bring to the boil. Once boiling, cover with a tightfitting lid and reduce to lowest heat to cook for 15 minutes. Turn off heat and steam, covered, for 8 more minutes. Do not lift lid during cooking.

Cook veggies Finely dice onion and grate carrot. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook onion and carrot for 3-4 minutes until softened. Add Mexican spices and cook stirring for 1 minute until fragrant.

Cook beef Add canned tomatoes, water measure, pulled beef, and soy sauce. Bring to a simmer and cook for 4-5 minutes, stirring occasionally, until beef is hot and sauce has thickened. Season to taste.

Make sour cream Combine sour cream and hot sauce for adults. Keep some plain for little foodies.

Prep lettuce and tomato Thinly slice lettuce and dice tomato.

Serve rice topped with beef, lettuce, tomato, cheese, sour cream and coriander.
