Beef Balti with Broccoli Coconut Rice

Ingredients

Curry

  • 2 carrots, grated
  • 1 pack diced curried beef
  • 1 pack balti curry sauce

Broccoli Coconut Rice

  • 2 broccoli, stalk and florets finely diced
  • 2 packs coconut rice
  • 1 pack chopped peanuts

To Serve

  • 1 pack yoghurt
  • Mint

Steps

  1. Prep and cook carrots Heat a drizzle of oil in a medium pot on medium heat. Cook carrots in fry-pan for 2-3 minutes, until tender.
  2. Simmer curry Add beef, balti sauce and a splash of water to pot with carrots. Bring to a gentle simmer and cook for 5-6 minutes, until beef is hot. Season. Turn off heat and cover to keep warm.
  3. Meanwhile, prep & cook rice Heat a drizzle of oil in a large pan or wok on high heat. Prep broccoli and stir-fry for 2-3 minutes, until tender. Squeeze rice in packs to separate grains. Add rice, peanuts and a splash of water to pan and toss together for about 2 minutes, or until hot through. Season.
  4. Serve curry on broccoli rice. Top with yoghurt and mint.
