Ingredients
Wraps
- 8 tortilla wraps
Slaw
- 1 pack slaw
- 1/2 pack red chimichurri mayo
Fish & Corn
- 250g frozen corn
- 1 pack market fish
- 1 pack Cajun spices
To Serve
- 1/2 pack red chimichurri mayo
- 1 pack salsa

Heat tortillas Preheat oven to 200 °C. Wrap tortillas in foil and heat in oven for 10-15 minutes until warmed through.

Make slaw and cook corn In a bowl combine slaw, 1/2 pack chimichurri mayo and a drizzle of olive oil and vinegar. Season to taste. Heat a drizzle of oil in a fry-pan on high heat. Add corn and cook for 3-5 minutes until charred. Season to taste. Reserve pan.

Prep fish Pat fish dry, remove any remaining scales or bones and cut any larger fillets in half. Season, then toss in a bowl with Cajun spices until coated.

Cook fish Heat a drizzle of oil in a reserved fry-pan on medium-high heat. Cook fish for 1-2 minutes each side, until just cooked through.

Serve tacos filled with slaw, fish, corn, salsa and remaining mayo.
