Pork Scotch Steak with Kumara and Orange Salad

Ingredients

Kumara

  • 200g kumara
  • 1 carrot
  • ½ pack baby spinach
  • ½ pack orange and saffron dressing

Pork

  • 1 pack pork scotch steak
  • 1 pack pork spices

Salad

  • 1 mandarin
  • 1/2 Lebanese cucumber

To Serve

  • 1 Tbsp yoghurt
  • Remaining dressing

Steps

  1. Cook kumara Preheat oven to 220°C. Dice kumara 2cm and carrot 1cm. Toss on a lined tray with a drizzle of oil and season. Roast for about 25 minutes, until tender.
  2. Cook pork Pat pork dry, season, and toss with pork spices and a drizzle of oil. Heat a drizzle of oil in fry-pan on medium heat. Cook pork for about 3 minutes each side for medium (depending on thickness), or until cooked to your liking. Rest, covered.
  3. Make salad Peel and divide mandarin into segments and finely dice cucumber. Place in a bowl with a drizzle of vinegar.
  4. To finish Slice pork thinly against the grain. Just before serving, add spinach and first measure of orange and saffron dressing to tray with cooked kumara. Toss to combine and season to taste.
  5. Serve kumara topped with pork, mandarin salad, yoghurt and remaining dressing.
