Pulled Beef Stroganoff with Potato Mash

Ingredients
Beef Stroganoff
- 1 pack beef cross cut
- 1 pack garlic
- 1 pack beef spices
- 1 brown onion, thinly sliced
- 1 carrot, diced
- 1 pack mushrooms, cut in half
- 1-2 tsp beef stock powder
- Water
- 1 pack tomato paste
- 1 pack baby spinach
- 125g lite sour cream
- 1 pack crispy shallots
Mash
- 1 pack pre-cooked potatoes, diced
- 1/2 cup milk
Have Handy
- oil
- salt
- pepper
- butter

Prep the night before or morning of Pat beef dry (dice 2cm if using oven, leave whole if using slow cooker) and place in slow cooker or casserole dish. Rub with garlic and beef spices and season. Prep onion and carrot and place in same dish. Cover and set aside until ready to cook.

Cook in slow cooker Prep mushrooms and add to slow cooker, along with 1 tsp beef stock powder, 1 cup water and tomato paste. Cook on low for about 9 hours, or until tender. Meat will pull apart easily when ready. Remove from sauce and roughly pull apart with 2 forks. Return to sauce.

Cook in oven Preheat oven to 200°C. Prep mushrooms and add to casserole dish, along with 2 tsp beef stock powder, 2 cups water and tomato paste. Cover and cook for about 2 hours, or until tender. Meat will pull apart easily when ready. Rest.

Cook potatoes Prep potatoes, place in a pot and cover with hot water. Cover and bring to the boil on high heat. Once boiling, cook for 4-5 minutes, until hot through. Drain and return to pot with a knob of butter and milk. Mash and season.

To finish Stir spinach and sour cream through beef and season.

Serve mash topped with beef Stroganoff. Garnish with crispy shallots.
