Creamy Beef Meatballs with Potato Mash

Ingredients

Mash

  • 800g potatoes
  • 2 parsnips
  • 2 Tbsp butter
  • 1/2 cup milk
  • 1 courgette

Meatballs

  • 1 pack beef mince
  • 1 pack beef spices
  • 1 egg
  • 1 leek
  • 1 1/2 cups beef stock
  • 125g sour cream

To Serve

  • 1 pack crispy shallots
  • 1 bunch parsley, chopped

Have Handy

  • oil
  • pepper
  • salt

Steps

  1. Make meatballs Combine beef mince, beef spices, egg, and 1 tsp salt in a bowl. Season with pepper. Roll into golf ball-sized balls.
  2. Cook meatballs Cut leek in half lengthways and thinly slice. Heat a drizzle of oil in a fry-pan on medium-high heat. Cook meatballs for about 4 minutes, until browned. Turn to ensure even cooking.
  3. Cook sauce Add leek to pan and cook for about 4 minutes, until tender. Add stock and simmer for about 3 minutes, until slightly thickened and meatballs are cooked through. Remove pan from heat and fold through sour cream. Season to taste.
  4. Serve mash and meatballs topped with crispy shallots and parsley.
