Dukkah Crusted Fish with Roasted Kumara and Yoghurt Tzatziki

Ingredients
Roasted Kumara
- 200g kumara, diced 2cm
- 1 carrot, diced 2cm
- 1/2 broccoli, florets and stalked diced 2cm
- Zest of 1/2 lemon
- 1/2 pack baby spinach
Fish
- 1 pack market fish, larger fillets cut in half
- 1 pack sesame chia dukkah
To Serve
- 1 pack tzatziki
- 1/2 lemon, cut into wedges

Preheat oven to 220°C.

Prep & cook vegetables. Toss kumara and carrot on a lined oven tray with 1/2 tsp oil. Season and roast in oven for 20 minutes. After 20 minutes add broccoli and lemon zest and return to oven.

Cook vegetables for a further 6-8 minutes, until vegetables are tender. Remove from oven and toss through spinach. Season to taste.

Prep fish. Season fish and toss in a bowl with dukkah, lightly pressing to coat.

Cook fish. Heat 1/2 tsp oil in a non-stick fry-pan on medium heat. Cook fish for 2-3 minutes each side, until fish is just cooked thorugh. Remove from pan and season.

Serve vegetables topped with fish and tzatziki. Squeeze over lemon.
