BBQ Beef and Cheese Pizzas

Ingredients

Pizza

  • 1 brown onion
  • 1 pack beef mince
  • 1 pack pizza spices
  • 2 Tbsp BBQ sauce
  • 1 capsicum
  • 70g tomato paste
  • 3 pizza bases
  • 1 1/2 cups grated 3 cheese mix
  • Remaining BBQ sauce

Salad

  • 1/4 cabbage
  • 1 carrot
  • 1/2 telegraph cucumber
  • 1 tsp mustard
  • 1/2 tsp honey (optional)
  • 2 Tbsp mayo

Have Handy

  • oil
  • salt
  • pepper
  • vinegar

Steps

  1. Cook beef Preheat oven to 220°C. Preheat two oven trays (or pizza stones if you have them). Thinly slice onion. Heat a drizzle of oil in a fry-pan on high heat. Cook beef and onion for about 4 minutes, until browned. Add pizza spices and cook, stirring, for 30 seconds further, until fragrant. Stir through first measure of BBQ sauce and season.
  2. Prep capsicum and sauce Thinly slice capsicum. Combine tomato paste and a drizzle of olive oil in a bowl.
  3. Prep bases Cut one pizza base in half, then spread tomato mix evenly over the three pizza bases. Sprinkle a little of the cheese, cooked beef, onion and capsicum evenly over the pizzas. Top with remaining cheese.
  4. Cook pizzas Transfer 1 1/2 pizzas to each tray and cook for 12-14 minutes, until base is crisp and golden. Swap trays halfway to ensure even cooking.
  5. Make salad and finish pizzas Thinly shred cabbage until you have 2-3 cups worth; grate carrot; thinly slice cucumber. Toss all in a bowl with mustard, honey, mayo and a drizzle of oil and vinegar. Season. Drizzle remaining BBQ sauce over pizzas and cut into triangles.
  6. Serve slices of pizza with salad on the side.
