Ingredients
Caprese
- 1 pack beef sirloin steaks
- 1 pack pearl couscous
- 1 pack green beans
- 4 vine tomatoes, cut into wedges
- 1 pack mini mozzarella balls
To Serve
- Basil pesto
- Basil
From the Pantry
- oil
- salt + pepper
- vinegar

Before you start, bring a medium pot of salted water to the boil on high heat (using hot tap water, with the lid on - for couscous).

Cook beef Heat a drizzle of oil in a large fry-pan on high heat. Pat beef dry, season and cook for 2-4 minutes each side, for medium (depending on thickness), or until cooked to your liking. Wrap in foil to rest.

Meanwhile, cook couscous Add couscous to boiling water and cook for 5 minutes. After 5 minutes, add whole beans to pot, and continue to cook for 3 more minutes, until beans and couscous are tender. Drain well.

Prep tomatoes Toss tomatoes with cooked couscous, beans, mozzarella and a drizzle of olive oil and vinegar. Season.

Slice beef and serve on couscous. Top with basil pesto, basil, and any beef resting juices. Drizzle with olive oil if desired.
