Thai Salmon with Asian Greens and Makrut

Ingredients
Salmon
- 1 pack salmon fillet
- 1/2 pack makrut Thai dressing
- 1/2 tsp sesame seeds
Asian Greens
- 1/4 broccoli, cut into small florets and stalk diced 2cm
- 1 baby bok choy, end trimmed and leaves seperated
- 1 clove garlic, sliced
- 1/2 pack makrut Thai dressing
- 2 tsp water
To Serve
- 1 radish, thinly sliced
- 1 spring onion, thinly sliced

Preheat oven to 220°C.

Prep salmon. Pat salmon dry and remove any pin bones. Place on a lined oven tray, season and rub with first measure of makrut Thai dressing. Sprinkle over sesame seeds and leave to marinate.

Prep greens.

Cook salmon. Cook salmon in oven for 6-8 minutes for medium, or until cooked to your liking. Rest, covered.

Prep garnishes.

Cook greens. Heat a fry-pan on medium-high heat. Cook broccoli for 2-3 minutes. Add baby bok choy, garlic, remaining makrut Thai dressing and water and cook for 2-3 minutes more, until greens are tender.

Serve salmon and greens topped with radish and spring onion.
