Beef Steaks & Creamy Mushrooms

Ingredients

Pumpkin

  • 1 pack peeled diced pumpkin
  • 1 pack pumpkin herbs
  • 1 pack pumpkin seeds

Beef

  • 1 pack beef sirloin steaks

Mushroom Sauce

  • 2 packs sliced mushrooms
  • 1 pack sour cream

To Serve

  • Baby spinach

From the Pantry

  • oil
  • salt + pepper

Steps

  1. Before you start, preheat your oven to fan bake 230°C (for pumpkin)
  2. Roast pumpkin Toss pumpkin, pumpkin herbs and pumpkin seeds on two lined oven trays with a drizzle of oil. Roast for 15-17 minutes, swapping trays halfway through, until cooked.
  3. Meanwhile, cook beef Heat a drizzle of oil in a large fry-pan on high heat. Pat beef dry, season and cook for 2-3 minutes each side for medium (depending on thickness), or until cooked to your liking. Remove from pan and wrap in foil to rest. Keep pan on heat.
  4. Make mushroom sauce Add another drizzle of oil to same pan. Cook mushrooms with ½ tsp salt, stirring for 3-4 minutes, until softened. Add a splash of water to remove any pan brownings. Reduce heat to medium, stir through sour cream and beef resting juices. Remove from heat and season. Slice beef.
  5. To finish top spinach with pumpkin, beef and mushroom sauce.
