Char Sui Pork with Asian Veggies

Ingredients

Rice

  • 1½ cups jasmine rice
  • 2¼ cups water ^

Pork

  • 1 pack pork fillet
  • 1 pack pork spices
  • 1 pack char siu sauce

Veggies

  • 2 baby bok choy
  • 1 broccoli
  • 1 pack crispy shallots

Have Handy

  • oil
  • pepper
  • salt
  • vinegar

Steps

  1. Cook rice Preheat BBQ grill to medium. Combine rice, water and a pinch of salt in a pot and bring to the boil. Once boiling, cover with a lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, still covered, for 8 more minutes. Do not lift lid during cooking.
  2. Prep pork and veggies Pat pork dry and rub with pork spices and a drizzle of oil. Season. Cut bok choy in quarters lengthways, keeping leaves together. Cut broccoli into large florets.
  3. Cook pork Cook pork on BBQ grill for 20-25 minutes, depending on thickness, or until cooked medium. Turning to ensure even cooking. Remove from heat and rub with char siu sauce. Rest, covered.
  4. Cook veggies Toss veggies with a drizzle of oil, season and cook on BBQ grill for about 5 minutes, until tender. Turn to ensure even cooking. Place on a platter, drizzle with vinegar and top with crispy shallots.
  5. To finish Thinly slice pork and toss in any resting juices.
  6. Serve rice, veggies and pork drizzled with resting juices.
