Lamb and Pita Bread Salad with Hummus

Ingredients
Lamb
- 1 pack lamb leg steaks
- 1 pack lamb spices
Salad
- 1 pack garlic pita breads
- 1 capsicum
- ½ telegraph cucumber
- 2 tomatoes
- ½ lettuce
To Serve
- ½ pack hummus
- 100g feta
Have Handy
- Oil
- Salt & Pepper
- Vinegar

Prep lamb Preheat oven to 200°C. Heat BBQ to medium, if using. Pat lamb dry and toss with lamb spices and a drizzle of oil. Season.

Prep salad Cut each pita bread into 6 triangles and thinly slice capsicum. Toss both on a lined tray with a drizzle of oil, season. Dice cucumber and tomatoes 2cm and roughly tear lettuce. Place in a bowl.

Cook pita Cook pita and capsicum for about 12-14 minutes, until capsicum is tender and pita is golden. Alternatively, cook on BBQ.

Cook lamb Heat a drizzle of oil in a fry pan on medium-high heat. Cook lamb for about 3 minutes each side for medium, depending on thickness, or until cooked to your liking. Rest, covered. Alternatively, cook on BBQ.

To finish Add pita and capsicum to bowl with salad along with a drizzle of olive oil and vinegar. Toss to combine and season. Thinly slice lamb against the grain and toss in any resting juices.

Serve salad topped with lamb, hummus and a crumble of feta.
