Beef Chow Mein

Ingredients
Noodles
- 280g egg noodles
Sauce
- 1 pack chow mein sauce
- 1 Tbsp soy sauce
- 2 Tbsp sweet chilli sauce
- 3 Tbsp water
Beef and Veggies
- 2 carrots
- 1 baby bok choy
- 1 pack beef mince
- 1 pack chow mein spices
- 1½ cups frozen peas
To Serve
- 1 spring onion
Have Handy
- Oil
- Salt & Pepper

Cook noodles Bring a medium sized pot of hot salted tap water to the boil with a lid on. Once boiling, add noodles and cook for about 8 minutes, until tender. Drain and return to pot with a drizzle of sesame oil to avoid sticking.

Make sauce Combine all sauce ingredients in a bowl with a drizzle of sesame oil.

Prep veggies Grate carrots and thinly slice bok choy and spring onion. Heat a drizzle of oil in a large fry-pan (or wok) on high heat. Cook beef for 4-5 minutes, stirring until browned. Add chow mein spices and cook, stirring, for about 1 minute, until fragrant.

Add carrots, bok choy and peas and cook for about 2 minutes, until veggies are just tender.

Add noodles and sauce to pan with beef and veggies. Toss to warm through and season to taste. Add a pinch of chilli flakes for adults.

Serve chow mein topped with spring onion.
