Oyster Mushroom Stir-Fry with Toasted Seeds and Sesame Dressing

Ingredients

Stir-fry

  • 1 pack seed mix
  • 1 Tbsp soy sauce
  • 2 cloves garlic
  • ½ broccoli
  • 1 baby bok choy
  • 1 pack oyster mushrooms
  • ½ pack soba noodles
  • 1½ cups edamame beans
  • 3 Tbsp sesame dressing

To Serve

  • Sesame dressing (optional)

Have Handy

  • Oil
  • Salt & Pepper
  • Soy Sauce
  • Sesame oil

Steps

  1. Toast seeds Bring a pot of hot, salted tap water to the boil with a lid on. Heat a drizzle of oil in a fry-pan on medium heat. Add seeds and toast for 2-3 minutes stirring often, until golden. Remove from heat, add soy sauce and stir quickly until coated. Remove from pan and set aside to cool.
  2. Prep veggies Thinly slice garlic; cut broccoli into small florets; thinly slice bok choy; roughly tear mushrooms.
  3. Cook noodles Cook noodles in pot of boiling water for 2-3 minutes, until tender. Drain well, and drizzle with sesame oil to prevent sticking.
  4. Cook veggies Wipe pan clean and heat a drizzle of oil in a fry-pan on medium-high heat. Cook mushrooms for 2-3 minutes, until golden. Add to pot with drained noodles. Return pan to heat and cook broccoli and garlic for about 4 minutes, until tender and charred. Add bok choy and edamame and cook a further 2 minutes, until heated through.
  5. Add noodles, mushrooms and first measure of sesame dressing to pan with vegetables and toss. Season to taste with soy sauce.
  6. Serve soba noodles with remaining dressing and toasted seeds.
