Ingredients
Veggies
- 1 pack sliced carrot and parsnip
- 1 pack sliced carrot and parsnip
- 2 packs haloumi, diced 3cm
- 1 pack broccolini
- 1 pack haloumi spices
To Serve
- Rocket
- Chimi yoghurt
From the Pantry
- Oil
- Salt & Pepper
- Vinegar
Steps

Roast carrot & parsnip Separate parsnip and carrot pieces. Toss with a drizzle of oil on a lined oven tray and season. Roast for 15 minutes, until tender.

Meanwhile, prep capsicum & haloumi Toss haloumi, capsicum and broccolini with a drizzle of oil and haloumi spices in a bowl. Place on a second lined oven tray and roast (on rack below carrot and parsnip) for 10 minutes, until veggies are tender, and haloumi has warmed through.

Plate rocket Toss rocket on serving plates with a drizzle of oil and vinegar.

To finish, rocket topped with veggies, haloumi and chimi yoghurt.
