Gourmet Pan-Seared Beef Eye Fillet with Parmesan Thyme Oven Fries & Black Garlic Yoghurt

Sensational flavours that will delight the senses. This restaurant-quality meal is simple to make at home, with hints of thyme and black garlic taking this classic steak and chips up a notch.
Ingredients
Parmesan Fries
- 1/2 tsp oil
- 200g potatoes, cut into chips
- 1/2 parsnip, cut into chips
- 1/2 Tbsp thyme, roughly chopped
- 1 Tbsp grated Parmesan
Beef
- 1/2 tsp oil
- 300g beef eye fillet
Black Garlic Yoghurt
- 50g yoghurt
- 1/4 pack black garlic, minced
Seasonal Greens
- 1/2 broccoli, cut into small florets
- 1 tsp oil
- 1/2 pack chopped walnuts
- 50g baby spinach

Preheat oven to 220°C (or 200°C fan bake).

Cut potatoes and parsnip into thick chips and roughly chop thyme. Toss all together with Parmesan and oil on a lined oven tray and bake in oven for 25-30 minutes, until tender and golden.

Pat beef dry and season with salt and pepper. Heat oil in a medium frypan on medium-high heat. Cook beef for about 3 minutes each side for medium-rare, depending on thickness, or until cooked to your liking. Rest covered and reserve pan.

Mince black garlic and combine in a small bowl with yoghurt and a pinch of salt. Set aside for serving.

Cut broccoli into small florets. When beef has cooked, return reserved pan to medium heat. Add oil and broccoli and cook for about 2 minutes without moving, until charred. Turn broccoli, add walnuts and a splash of water and cook for a further 1-2 minutes, until broccoli is tender and charred. Toss through baby spinach to wilt and season to taste with salt and pepper.

Chips with steak and greens. Spoon over black garlic yoghurt.
