Fruit Parfait with Quick Granola Crumb
Ingredients
Fruit Parfait
- 1 cup fresh strawberries, halved or quartered
- 2 nectarines, flesh diced 1cm
- ½ cup fresh blueberries
- Juice of ½ lime
- 2 Tbsp mint leaves, thinly sliced
- 1 cup thick, unsweetened Greek yoghurt
- 1 tsp honey (optional)
Quick Granola
- 2 tsp olive oil
- 1½ Tbsp honey
- ½ cup jumbo rolled oats
- 1 tsp cinnamon
- 1 Tbsp pumpkin seeds
- 1 Tbsp sliced or slivered almonds
Instructions
- Before you start line an oven tray with baking paper.
- Prep strawberries and nectarine. Toss in a bowl with blueberries, lime juice and mint. Set aside.
- Heat oil measure and honey in a pan on medium heat. Stir to combine and heat for about 30-60 seconds, until bubbling. Add oats, cinnamon, seeds and almonds and stir to coat in liquid. Continue to cook for 3-4 minutes, until lightly golden and fragrant. Reduce heat if oats begin to colour too quickly. Turn out granola on the prepared tray and leave to cool.
- Serve yoghurt, fruit and granola layered in glass tumblers. Drizzle with honey.
