Middle Eastern Grain Bowl
Ingredients
- 1 pack pre cooked brown rice & quinoa mix or 2x 125g cups
- 1 Lebanese cucumber peeled into ribbons
- 1 capsicum sliced 1cm
- 50 g baby spinach
- 50 g feta cheese crumbled
- ½ lemon juiced
- 2 Tbsp hummus
- 1 Tbsp sunflower seeds
- 1 Tbsp pumpkin seeds
Instructions
- Cook rice & quinoa mix in microwave as per packet instructions
- Peel cucumber into ribbons and slice capsicum
- Once rice has cooked, toss in a large bowl with cucumber, capsicum and spinach. Squeeze in lemon juice, season with salt and pepper and toss to combine
- Serve salad in bowls, dollop over hummus and sprinkle with seeds. If you have time, toast seeds for 1-2 min a small dry frypan on medium-high heat for extra flavour
