Apple Pecan Caramel Oat Slice
Ingredients
Caramelised apples
- 1 large apple cored and finely chopped (or 2 medium)
- 2 tsp coconut oil
- 2 Tbsp maple syrup
Slice
- 1 ¾ cup rolled oats
- ¼ cup ground almonds
- ½ cup desiccated coconut
- ½ cup pecans roughly chopped
- ¼ cup pumpkin seeds
- 1 Tbsp chia seeds
- 2 tsp ground cinnamon
- 1 ½ tsp ground ginger
- ⅓ cup maple syrup
- ¼ cup coconut oil melted
- 2 eggs (medium)
Instructions
- Preheat the oven to 180°C fan bake. Line a medium slice tin (18x18cm) with baking paper.
- Core and finely chop apple. Heat coconut oil and maple syrup in medium pan on medium heat for 4 minutes to caramelise. Add apples to pan and cook for 5 minutes or until golden and softened. Remove from heat and set aside to cool.
- In a large mixing bowl, combine oats, ground almonds, desiccated coconut, pecans, pumpkin seeds, chia seeds, cinnamon and ground ginger.
- Add maple syrup, coconut oil, eggs to dry mix and stir until just combined. Stir through caramelised apples.
- Spoon slice mixture into prepared tin and gently spread into an even layer. Bake for 20-25 minutes or until golden. Leave to cool completely before slicing into 12 slices. Store in an airtight container.
