Make the most of stone fruit season with this delicious peachy twist on the classic mojito. We’ve used juicy fresh peaches here, though you can use any stone fruit you fancy! It’s sweet, sweet summer perfection.
Peach & Lime Mojito
Ingredients
Peach pulp
- 1 kg fresh peaches (or your favourite stone fruit)
- 3 limes zested & juiced
- 1 cup caster sugar
- ½ cup water
To serve
- ice cubes
- 4-5 tbsp mint leaves
- 1 lime
- 1.5 litres soda water
- 250 ml white rum, gin or vodka (optional)
Instructions
- Remove stone from peaches and roughly chop. Add to a large pot along with zest and juice of limes, caster sugar and water. Place pot on a medium heat, bring to a simmer then allow to reduce into a pulp for 10-15 minutes (depending on the softness of your fruit). Use a potato masher to break peaches up while cooking.
- Once sugar has dissolved and peaches have softened, remove from heat and allow to cool for at least 10 minutes. Place half the mixture into a heat-safe food processor or blender and blend until smooth. Repeat with remaining half.
- Allow pulp to come to room temperature before serving or placing into the fridge to cool.
- To serve, place 3 tablespoons of peach pulp into each glass with 30ml of liquor (if using), stir, then fill with ice cubes. Place a slice of lime and some mint into each glass and top up glass with soda water. Alternatively place 2 cups of syrup with all 'to serve' ingredients into a carafe for easy sharing!
