Craving a yummy snack? Give these healthier chips a whirl! Made with veggies and a delicious French onion dip, these can be whipped up in your air-fryer for a quick and easy snack.
Dip
1 red onion, finely diced
1 brown onion, finely diced
2 tsp oil
150g lite natural yoghurt
150g lite sour cream
1 Tbsp chives, finely chopped
1/8 tsp garlic powder
1/8 tsp smoked paprika
Chips
1 small kumara, thinly sliced into rounds
1 small beetroot, thinly sliced into rounds
1 small potato, thinly sliced into rounds
1 tsp oil
- Before you start
Preheat air fryer to 180°C. - Prep dip
Finely dice both onions. Heat 2 tsp oil in a medium pot on medium heat. Add onions and a pinch of salt and cook, stirring often for 12-15 minutes, until caramelised. If onions start to stick, add a splash of water. This will also help get them jammy. - Finish dip
Allow onions to cool. Finely chop chives and mix in a bowl with cooled onions, yoghurt, sour cream, garlic powder and smoked paprika. Season to taste with salt and pepper and keep in fridge, until ready to eat. - Prep & cook chips
Thinly sliced kumara, beetroot and potato into rounds and toss in a medium bowl with 1 tsp oil. Season with salt and cook in batches, in a single layer on your air fryer tray, for 10-15 minutes, until golden. - Serve
Chip with dip on the side.
