Lemons: a common citrus fruit with a distinctive sour taste, that can be used to add so much great flavour to food. Used in both sweet and savoury dishes they can add a tangy, refreshing flavour. The zest, juice, flesh and whole fruit can be used in everything from baking, drinks, sauces, salad dressings, marinades and desserts.
They are also an excellent source of vitamin C and antioxidants. Simply squeezed over fresh fruit such as apples, pears and avocados to prevent them from going brown or juice and freeze into an ice cube tray to use when needed.
Other uses for lemons include cleaning! Use them to degrease pans, wipe down counters, refresh wooden cutting boards, remove rust or clean grill grates.

Hot Lemon Honey Ginger
A delicious warming winter drink, perfect for a little immunity boost. It can be enjoyed both hot or cold.
- ½ lemon, juiced
- 1 tsp fresh ginger, grated
- 1 cup hot water
- 1 tsp manuka honey
Bring water to the boil. Add ginger and lemon juice to a large cup. Fill the cup with hot water and stir. Add honey and stir to dissolve.
Lemon Curd
Is simple and easy to make lemon curd from scratch. This tasty spread with both sweet and tart, great spread on toast, in cakes and pies or on scones. It’s worth having a jar stored in the fridge!
- 4 lemons, zested & juiced
- 4 eggs
- 1 cup sugar
- 150g butter, cut into cubes
Zest and juice lemons (it should make about ¾ cup juice). Heat a medium pot on a low to medium heat. Add eggs and sugar and whisk until combined. Continue to whisk while adding lemon juice, zest and a pinch of salt. Once incorporated add in butter, whisking constantly. Continue to cook, whisking until the curd thickens about 10 minutes. Remove from the heat. Transfer to a jar, let cool and then store airtight in the fridge.
Lemon Baked Salmon
Easy baked salmon with fresh herbs and plenty of lemon. Great served with roasted vegetables, stir-fried greens or salad.
- 2 salmon filets
- Drizzle of olive oil
- 1 lemon, thinly sliced
- 2 Tbsp fresh dill, roughly chopped
Preheat oven to 200°C (180°C fan bake). Line a tray with baking paper. Pat salmon dry and place onto baking tray (skin side down). Drizzle with olive oil and season with salt and pepper. Slice lemon and chop dill. Top salmon with lemon slices and sprinkle with dill. Bake for 12-15 minutes or until the centre is fully cooked. Serve with desired sides.
Lemon Vinaigrette
A great easy dressing for drizzling over roasted vegetables, adding to warm and cold salads and more!
- 4 Tbsp lemon, juiced
- ¼ cup olive oil
- 1 tsp maple syrup or honey
- 1 garlic clove, minced
- Salt and pepper
Add ingredients to a blender and blend until well combined. Alternatively, add to a small bowl and whisk together.
