Serves 4
1 cup frozen peas
2 Tbsp chopped mint leaves
Juice of 1/2 lemon
2 Tbsp lite sour cream
- Bring a small pot of salted water to the boil.
- Cook peas. Add peas to pot of boiling water and cook for 1–2 minutes, until bright green and tender. Drain, rinse under cold water and drain again well.
- Make dip. Combine all dip ingredients and 1/2 tsp salt in a food processor and blitz for about 1 minute, until roughly combined. Alternatively, mash ingredients together in a bowl.
- Serve with veggie sticks.
