Chai Puffs

Having one of these satisfying snacks is a perfect way to curb mid morning hunger or 3pm slump! With a ground almond base and nut butter base, these are well suited to our gluten and dairy free foodies.

Ingredients

1 banana, skin removed
1 egg
¾ cup nut butter
¼ cup maple syrup or runny honey
1 teaspoon apple cider vinegar
½ teaspoon baking soda
¾ cup ground almond
¼ cup coconut thread or chips
1 teaspoon cinnamon
½ teaspoon ground ginger
¼ teaspoon nutmeg
¼ teaspoon cardamom

Method

Preheat oven to 160C. Line an oven tray with baking paper.

1. Mash banana in a large bowl. Crack eggs into bowl with banana and whisk together to combine. Add nut butter, maple syrup, vinegar and baking soda and mix to combine.

2. Add all remaining cookie ingredients and mix well to combine.

3. Using a two dessert spoons, spoon about 1 tablespoon worth of mixture onto prepared tray, flattening out a little into a rustic cookie shape. Repeat with remaining mixture.

4. Bake in oven for 16–18 minutes, until golden. Remove tray from oven and allow cookies to cool completely on a wire rack. Store in an airtight container.
