#loveyourleftovers breakfast edition, this recipe uses leftover brown rice creating a delicious healthy twist on a classic creamy rice pudding. Enjoy!
Ingredients
1/3 cup cooked brown rice
¼ cup lite coconut milk
¼ cup milk (e.g. dairy, almond, soy)
¼ tsp cinnamon
¼ tsp vanilla
½ tsp honey
To serve
2 Tbsp unsweetened yoghurt
1–2 tsp sliced almonds
1 kiwifruit, skin removed and thinly sliced or ¼ cup mixed berries
Methods
- In a small pot, combine all brown rice brekkie ingredients and bring to a simmer. Reduce heat to low and continue to simmer for 12–15 minutes, or until thickened to desired consistency, stirring occasionally.
To serve, place brown rice brekkie into a bowl and top with yoghurt, almonds and fruit.
