Kids Fav Veggie Curry

Servings 4 people

Ingredients

Rice

  • 300 g basmati rice
  • 2 1/4 cup boiling water

Curry

  • 1 drizzle oil
  • 1 brown onion
  • 400 g potatoes
  • 400 g pumpkin
  • 400 g coconut milk
  • 1 broccoli
  • 1 Tbsp soy sauce
  • 100 g baby spinach

Curry Paste

  • 2 cloves garlic, minced
  • 1 Tbsp ginger, finely grated (or use 1 tsp ground ginger)
  • 1 Tbsp tomato paste
  • 2 tsp sugar
  • 2 tsp mild curry powder

Instructions

BOIL RICE

  • Boil a kettle. Combine rice, boiling water measure and a pinch of salt in a pot. Cover with lid and bring to the boil. Drop to lowest heat and cook for 12 mins. Turn heat off, leave lid on and steam for 5 mins.
  • Meanwhile, dice onion, potato and pumpkin 1 cm.

MAKE PASTE

  • In a small bowl, combine curry paste ingredients.

COOK CURRY

  • Heat oil in a fry pan on medium-high.
  • Cook onion, potato and pumpkin with a pinch of salt for about 6 mins, until browned. Add curry paste and 1/4 cup coconut milk and cook for 1-2 mins, until fragrant.
  • Add remaining coconut milk measure to pan. Bring to a simmer and cook for about 10 mins, until veggies are tender and sauce has thickened. Cut broccoli into florets, dice stalk and add to pan. Cook for a further 3 mins, until broccoli is tender. Stir through soy sauce measure and spinach.
  • Season to taste with soy sauce.
  • Plate up rice topped with curry. Dig in!
