Vegan Double Chocolate Chip Cookie Kit, Makes 8

- ¾ pack dark chocolate roughly chopped
- 120 g vegan butter roughly chopped
- ¼ cup plant based milk ^
- 1 tsp vanilla extract ^ (optional)
- ¼ tsp salt ^
- 1 pack vegan double chocolate cookie mix

Instructions
- Preheat oven to 180°C (or 160°C fan bake).
- Roughly chop chocolate and vegan butter and set aside separately.
- Add vegan butter to a mixing bowl and use electric beaters to cream butter for 4-5 minutes, until light and creamy. Add plant-based milk and vanilla extract and mix again for another minute, until combined. Add chocolate, salt and Vegan Double Chocolate Cookie mix and mix through with a wooden spoon until well combined.
- Divide cookie dough into 8-10 golf ball sized balls and place on two lined oven trays. Flatten cookies and bake for 15-18 minutes, until cooked through.
- Transfer cookies to a wire-rack and allow to cool before eating.
