  • ¾ pack dark chocolate roughly chopped
  • 120 g vegan butter roughly chopped
  • ¼ cup plant based milk ^
  • 1 tsp vanilla extract ^ (optional)
  • ¼ tsp salt ^
  • 1 pack vegan double chocolate cookie mix

    Instructions

    • Preheat oven to 180°C (or 160°C fan bake).
    • Roughly chop chocolate and vegan butter and set aside separately.
    • Add vegan butter to a mixing bowl and use electric beaters to cream butter for 4-5 minutes, until light and creamy. Add plant-based milk and vanilla extract and mix again for another minute, until combined. Add chocolate, salt and Vegan Double Chocolate Cookie mix and mix through with a wooden spoon until well combined.
    • Divide cookie dough into 8-10 golf ball sized balls and place on two lined oven trays. Flatten cookies and bake for 15-18 minutes, until cooked through.
    • Transfer cookies to a wire-rack and allow to cool before eating.
