Low Carb Salmon & Cottage Cheese English Muffin Kit, Makes 6
Ingredients
Muffins
- 6 Tbsp butter ^
- ¾ pack ceres LSA
- 6 eggs ^
- 6 tsp baking powder ^
Toppings
- 250 g lite cottage cheese
- 100 g cold smoked salmon
- 50 g capers
- 1 lemon cut into wedges

Instructions
- To make one muffin, melt 1 tbsp butter in a wide bottomed mug or 10 cm ramekin in the microwave. Spread it around the sides or coat it in oil, if using.
- Add 3 tbsp of LSA, 1 egg, 1 tsp baking powder and a pinch of salt to the ramekin or mug. Mix well with a fork.
- Cook in microwave for 60-90 seconds. Let cool slightly before slicing in half horizontally to create an English muffin. Lightly toast in toaster (optional). Repeat for remaining muffins.
- Top muffin with cottage cheese, smoked salmon, capers & squeeze over lemon juice.
