Low Carb Salmon & Cottage Cheese English Muffin Kit, Makes 6

Try these quick low-carb English muffins. They taste just like wholemeal bread and can be made in just 90 seconds. We've created this kit so you can make 6 individual muffins, and loaded them with cottage cheese and smoked salmon for extra protein. You can't have salmon without a squeeze of lemon and salty capers – a match made in heaven!

Ingredients

Muffins

  • 6 Tbsp butter ^
  • ¾ pack ceres LSA
  • 6 eggs ^
  • 6 tsp baking powder ^

Toppings

  • 250 g lite cottage cheese
  • 100 g cold smoked salmon
  • 50 g capers
  • 1 lemon cut into wedges

    Instructions

    • To make one muffin, melt 1 tbsp butter in a wide bottomed mug or 10 cm ramekin in the microwave. Spread it around the sides or coat it in oil, if using.
    • Add 3 tbsp of LSA, 1 egg, 1 tsp baking powder and a pinch of salt to the ramekin or mug. Mix well with a fork.
    • Cook in microwave for 60-90 seconds. Let cool slightly before slicing in half horizontally to create an English muffin. Lightly toast in toaster (optional). Repeat for remaining muffins.
    • Top muffin with cottage cheese, smoked salmon, capers & squeeze over lemon juice.
