Baked Caramel & Banana Rice Pudding, Serves 4
Ingredients
Rice Pudding
- 1 pack rice pudding mix
- ¾ pack cream
- 650 ml milk ^
- 1 tsp vanilla extract ^
Caramel Sauce
- 1 pack brown sugar
- 100 g butter ^
- ¼ pack cream
- 2 bananas
- 1 pack chopped walnuts

Instructions
- Preheat oven to 150°C bake.
- In a medium baking dish (about 25x25cm) combine rice pudding mix, first measure of cream, milk and vanilla. Bake for 80-90 minutes, until thick and creamy. Do not stir while baking. Rest for 5 minutes.
- While pudding rests, make caramel sauce. Place brown sugar, butter and remaining cream in a frypan on low heat and cook for 2 minutes. Slice bananas in half lengthways and add to pan, along with walnuts, tossing to coat.
- Pour bananas, walnuts and caramel on top of rice pudding and serve.
