Black & White Kiwi Kisses Cookie Kit, Makes 10

Ingredients

Kiwi Kisses

  • 3 Tbsp butter ^ melted
  • 1 pack black & white Kiwi kisses cookie mix
  • ½ tsp salt ^
  • ¾ cup milk ^
  • cup oil ^
  • 1 egg ^
  • 1 tsp vanilla extract ^

Buttercream Filling

  • 100 g cream cheese at room temperature
  • 100 g butter ^
  • 250 g icing sugar
  • 2 Tbsp milk ^ (optional)

    Instructions

    • Preheat oven to (175°C). Do not use fan bake.
    • Add first measure butter to a heatproof bowl and microwave in 30 second bursts, until melted. Alternatively, add butter to a small pot and heat on low, until melted.
    • In a clean dry bowl (or bowl of your stand mixer), gently whisk together kiwi kisses cookie mix and salt measure, until combined. Add butter and remaining kisses ingredients and mix well, until smooth.
    • Using a Tbsp measure, dollop 18-20 portions of mixture onto 1-2 lined oven trays.
    • Bake for 8-10 minutes, until firm to the touch. Set aside to cool to room temperature.
    • Whisk together cream cheese and second measure of room temperature butter in a large bowl, until well combined. Add icing sugar and mix until combined. If filling is looking too thick, add 1-2 Tbsp of milk. Set aside for serving.
    • To assemble, spread filling onto one half of cookie and sandwich together with second half.
