St Patrick’s Day Mint Choc Cookie Kit, Makes 12

Cookies
- 170 g butter ^ melted
- 1 egg ^
- 1 pack cocoa cookie mix
Mint Chocolate Drizzle
- 1 pack mint dark chocolate

Instructions
- Preheat oven to 190°C. Line an oven tray with baking paper.
- Melt butter. Whisk egg in a large bowl, then add cookie mix and melted butter. Mix gently to form a dough. Measure slightly heaped tablespoons of dough and drop onto prepared tray.
- Bake for 10-12 minutes, or until lightly browned. Leave to cool on tray for a few minutes before transferring to a wire rack to cool completely.
- While cookies bake, melt mint chocolate. Roughly chop mint chocolate and add to a small, heatproof bowl. Microwave in 30 second bursts, stirring after each burst, until chocolate is melted.
- Drizzle melted mint chocolate over the baked cookies.
