Quick Chicken Hawker Roll Kit, Serves 2
Ingredients
- 1 drizzle of oil
- 300 g free range chicken breast, diced
- 40 g veggie nasi goreng paste
- 100 ml light coconut milk
- 1 pack flaky roti
- 150 g slaw
Instructions
- Heat oil in a large frypan on medium-high heat. Add chicken and nasi goreng paste and cook for 6-8 minutes, stirring, until browned and cooked through. Stir through coconut milk and cook for 2 minutes, until hot through. Season to taste with salt and pepper. Remove from pan and set aside in a bowl to serve. Wipe pan clean and return to medium-high heat.
- Place one roti in pan and cook 1 minute per side, until lightly toasted and crispy. Repeat with remaining roti. Once warmed, scrunch or squash edges of roti towards the centre for a more fluffy texture.
- Fill roti with slaw and pulled chicken.
