Bruschetta Wrap Pizza
Ingredients
- 1 pack wheatmeal tortillas
- 100 g pizza sauce
- 1 pack cherry tomatoes, cut into quarters
- 125 g mozzarella, diced
- 1 tsp olive oil
- 1 tsp balsamic vinegar
- 10 g bunch basil
Instructions
- Preheat oven to 200°C (or 180°C fan bake). Preheat two oven trays.
- Transfer tortillas to baking trays and bake for 5-6 minutes, flipping halfway through baking. Once the bases begin to crisp, spread pizza sauce evenly over pizza bases and bake again for a further 5 minutes.
- Meanwhile, cut cherry tomatoes in quarters, dice mozzarella and mince garlic. Toss in a bowl with olive oil and balsamic. Season with salt and pepper.
- Top pizza bases with bruschetta topping and sprinkle over basil leaves.
