Chickpea Blondies
Ingredients
- 1 400g can chickpeas, drained and rinsed
- ¼ cup nut butter (e.g. almond, peanut)
- ⅓ cup maple syrup or honey
- ⅓ cup ground almonds
- ¼ tsp baking soda
- ¼ tsp baking powder
- 50g refined sugar free dark chocolate, chopped (optional)
Instructions
- Preheat oven to 180°C. Line a small baking dish (measuring about 10x10cm) or a loaf tin with baking paper.
- Prep & make batter. Combine all ingredients (except chocolate) in a food processor. Blend for about 1 minute, until mixture is smooth and combined.
- Fold through chocolate and transfer mix to baking dish/ loaf tin. Sprinkle over a pinch of flaky sea salt (optional).
- Bake blondie. Bake in oven for 30-35 minutes, until golden on top. Allow to cool for 5 minutes, then transfer to a wire rack and allow to fully cool and set.
- Cut blondie into 10 pieces, then enjoy, or refrigerate or freeze.
