A healthier twist on a classic combination we all know and love. These wraps will hit the spot for a quick and easy lunch!
Chicken Caesar Lunch Wrap
Ingredients
- 600 g free-range chicken breast cut into steaks
- 1 tsp oil
- 2 baby cos lettuce thinly sliced
- 1 Telegraph cucumber cut in half lengthways & sliced
- 100 g Caesar dressing
- 70 g Parmesan cheese grated
- 5 8-inch wholemeal tortilla wraps
Instructions
- Prep chicken Pat chicken dry and cut into steaks. Place your hand flat on top of chicken and slice through horizontally. Season with salt and pepper.
- Cook chicken Heat oil in a large frypan on medium-high heat. Cook chicken for 3-5 minutes each side (depending on thickness), or until cooked through. Rest, uncovered before slicing thinly.
- Prep salad While chicken cooks, thinly slice baby cos lettuce. Cut cucumber in half lengthways and thinly slice. Toss both in a large bowl with Caesar dressing and grated Parmesan and set aside for serving.
- Serve Assemble wraps with chicken and salad.
