Eggs Benedict Bagel Kit, Makes 4

Ingredients

Bagels

  • 1 pack sesame bagels

Eggs Benedict

  • 1 drizzle of oil ^
  • 1 pack bacon
  • 100 g herb Hollandaise
  • 4 eggs

Instructions

  • Preheat oven to high grill. Bring a large deep pan or skillet of hot salted water to the boil for poaching eggs.
  • Cut bagel in half and toast under grill for 1-2 minutes. Keep an eye on the bagels to ensure they do not burn. Alternatively, toast bagels in toaster
  • Heat oil in a frypan on high heat. Cook bacon for about 2 minutes each side, until golden and cooked through. Remove from pan and set aside. Keep warm.
  • While eggs cook, place hollandaise in a microwave safe dish. Heat in microwave on high for about 30 seconds to 1 minute, until hot.
  • Once boiling, reduce heat to a simmer. Gently crack eggs into water, one at a time. Swirl gently with a spoon for 10 seconds, just until egg begins to set. Repeat with remaining eggs. Cook, swirling occasionally, until egg whites are fully set but yolks are still soft, about 4 minutes. Once cooked, carefully lift eggs from pot with a slotted spoon. Serve immediately.
  • Fill bagels with bacon, eggs and herb Hollandaise.
