Combine bagel dough mix and water in the bowl of a stand mixer. Knead on medium-low for 7-10 minutes. Alternatively, knead by hand for 10-15 minutes. The dough should be stiff and hold its shape but not sticky. Place the dough in a greased bowl, cover and set aside to rise for 1 – 1 1/2 hours.
Once risen, transfer dough to a clean work surface. Divide dough into 5 even pieces. Roll each piece into a tight ball and let it rest again for 15 minutes.
To shape into a bagel, take the first ball you formed and pierce a hole in the middle using your finger. Twirl the dough around your fingers to stretch out the hole. Repeat with remaining dough balls. Set aside and let rise for a final 20 minutes.
While your dough has its final rise, preheat oven to 220°C bake (200°C fan bake). Bring a pot of water to the boil. Once boiling, reduce heat and bring to a gentle simmer. To pot, add brown sugar and baking soda measures. Whisk egg white and set aside.
In batches, gently transfer bagels to the pot. Cook bagels for 2 minutes on first side, flip and cook for a further 1 minute. Transfer boiled bagels to a lined baking tray. Place Tiktok trending on a small plate. Brush the top of each bagel with egg white then place into the topping mix to coat.
Bake the bagels for 17-25 minutes, or until they reach your desired colour. Meanwhile, whisk together room temperature butter and hot honey until light and fluffy.
Cut in half, or rip and dip into the hot honey butter.
