Mexi Beans & Cheese Quesadillas, Serves 4
Ingredients
Quesadillas
- 250 g Colby cheese grated
- 1 pack tortillas (12 pack)
- 1 can black beans
- 1 pack taco 'bout flavour Mexican spices
- 125 g sour cream
- 4 Tbsp sweet chilli sauce ^

Instructions
- Grate cheese. Heat a dry frypan on a low-medium heat. Place a tortilla in the pan. To one half of the tortilla, add beans, cheese and a sprinkle of spices. Fold the other half of the tortilla over the top of the filling and press down. Cook for 2-3 minutes until first side is browned then flip and cook second side for a further 2-3 minutes. Repeat with remaining tortillas.
- Cut into triangles and enjoy with sour cream and sweet chilli.
