Ingredients

Chicken

  • 600 g free range chicken breast diced 2cm
  • 1 drizzle of oil ^
  • 80 g veggie nasi goreng paste
  • 200 ml light coconut milk
  • 1 Tbsp soy sauce ^

Bowl Fillings

  • 1 lime cut into wedges
  • 1 avocado sliced
  • 350 g slaw
  • 1 bunch coriander
  • 1 pinch of chilli flakes ^ (optional)

    Instructions

    • Pat chicken dry and dice 2cm. Heat oil in frypan on medium-high heat and cook chicken with nasi goreng paste for about 4-5 minutes, tossing occasionally, until golden but not cooked through. When chicken cook time has finished, add coconut milk and soy sauce to pan and cook for about 2-3 minutes, until chicken is cooked through, and sauce has thickened. Season to taste with soy sauce.
    • Cut lime into wedges and slice avocado.
    • Fill bowls with slaw, chicken, avocado, coriander, squeeze over lime and sprinkle chilli flakes (if using).
