Salted Caramel Blondie with Sticky Bacon, Serves 8
Ingredients
Sticky Bacon
- 150 g bacon
- 50 g salted caramel sauce
Caramel Blondies
- 1 pack blondie mix (290g)
- 120 g butter ^
- 1 egg ^
- 2 tsp vanilla extract ^
- ¼ tsp salt ^
- 50 g salted caramel sauce

Instructions
- Preheat oven to 180°C. Grease and line a baking dish with baking paper (about 20x15cm). Line an oven tray with baking paper.
- Place bacon onto oven tray and use a pastry brush to baste with first measure of caramel salted sauce. Bake (on top oven rack) for 15 minutes then flip, baste again with caramel sauce and return to oven for a further 15 minutes, until golden. Once cool enough to handle, very finely chop the sticky bacon.
- Place blondie mix in a large bowl and stir in melted butter, egg, vanilla and salt.
- Transfer mixture to prepared dish then drop teaspoon amounts of second measure of salted caramel sauce over the batter (reserve some for serving). Use a knife to drag through the salted caramel and swirl throughout the mixture.
- Bake for 30-35 minutes until set and golden and set around the edges. Allow to cool, top with chopped bacon and drizzle with any remaining salted caramel sauce.
