Chicken, Cranberry & Brie Pizzas, Serves 2

A deliciously easy Friday night dinner that everyone is sure to love! Sweet cranberry sauce is topped with spinach and chicken, all finished off with creamy brie and mozzarella on top of a crispy base – what more could you want!

Ingredients

Pizzas

  • 1 free range chicken breast
  • ½ pack Brie cheese
  • 1 pack pizza bases
  • 1 pack cranberry sauce
  • 25 g baby spinach
  • 50 g grated mozzarella cheese

Instructions

  • Preheat oven to 180°C (or 160°C fan bake) and line a baking tray with baking paper.
  • Pat chicken dry and dice 1cm. Slice brie lengthways.
  • Place bases on lined baking tray. Divide cranberry sauce between wraps and spread to cover. Assemble spinach and chicken on top of cranberry sauce. Layer brie on top of chicken and sprinkle over mozzarella.
  • Bake in the oven for 10-15 minutes, until chicken is cooked (juices run clear) and bases are crisp and golden around the edges and cheese is melted.
