Ingredients

Crumble Cake

  • cup oil ^
  • 2 eggs ^
  • cup milk ^
  • 2 tsp vanilla extract ^
  • 1 pack crumble cake mix
  • 100 g butter ^ melted
  • 1 pack apple crumble mix
  • 1 pack blackberry compote
  • 400 g Greek yoghurt

    Instructions

    • Preheat oven to 180°C bake. Line a 20cm cake tin with baking paper.
    • In a large bowl, whisk together oil, eggs, milk, vanilla and a pinch of salt. Once combined, gently fold in crumble cake mix until just combined.
    • In a separate bowl, melt butter and combine with Apple Crumble Mix, tossing to combine.
    • Pour Crumble Cake Mix into prepared tin, dollop over compote then cover in crumble mixture. Bake for 50-60 minutes, until a knife inserted comes out clean.
    • Slice up cake and top with yoghurt.
