Chocolate Celebration Cake

Celebrate our Olympic wins with this celebration cake! Soft and fluffy chocolate cake, topped with an indulgent chocolate glaze and milk chocolate hokey pokey pieces.

Ingredients

Chocolate Celebration Cake

  • 125 g butter ^
  • 1 pack cocoa powder
  • ½ cup water ^
  • 1 pack cake mix
  • ½ tsp salt ^
  • 1 egg ^
  • ½ cup milk ^

Toppings

  • 1 pack chocolate icing mix
  • 2 Tbsp water ^
  • 1 pack hokey pokey in milk chocolate

    Instructions

    • Preheat oven to 180°C. Line a 20cm cake tin with baking paper.
    • Place butter, cocoa powder and water in a heatproof bowl and heat in the microwave for 30 seconds at a time, until butter is melted. Alternatively place ingredients in a pot on the stove and heat until butter is melted. Set aside to cool to room temperature.
    • In a second large bowl, place Celebration Cake Mix and salt. Pour cooled, wet mix into dry mix and whisk to combine. Add egg and milk and fold to combine. This is quite a thin, liquidy mixture – don't fret!
    • Transfer mixture to prepared tin and bake for 20-25 minutes, until a skewer inserted comes out clean. Wait for the cake to cool entirely before glazing.
    • For the glaze, combine Chocolate Icing Mix with water in a small bowl. You want it to be quite thick so it doesn't run. Add a little more water if needed.
    • Top cake with hokey pokey chocolate pieces.
